Boann Single Pot Still Irish Whiskey Madeira Cask | 70cl | 47% ABV B0F1DW78FC
Initially, matured in ex-Bourbon Barrels from the famed Brown Forman of Kentucky and made from American Oak 200ltr (Quercus Alba) with a heavy charring. We filled these casks with a mixed mash bill Single Pot Still distillate which included malted barley, unmalted barley, oats and rye. All of these grains are Irish and grown locally. In collaboration with the famous Madeira house, Justino’s, we sourced some of their finest vintage Madeira casks of Tinta Negro (1998 & 2000), Boal (1999) and Sercial (1999, 2000 & 2006) Madeira Colheita wine single varietals. We were able to access these casks from a friendship that has flourished from a previous special collaboration. The wines have been fortified and undergone the canteiro process where the wine is barrel aged with naturally high temperatures in the barrel storage room, replicating the sea voyage maritime aging of the past on Portugal galleons of the medieval ages. All casks were formally 350ltr Cognac casks made from (Quercus Robur) French Oak. These Madeira wines ranged from Sweet to Medium to Dry, offering a wide depth and breadth of the terroir of the volcanic island of Madeira. The label design of this expression talks about water which is a vital ingredient when making whiskey. This is also a nod to the flowing waters of the Boyne River as well as the North Atlantic Ocean surrounding the Madeira Islands. Nose: A vibrant nose with enticing aromas of apples and peaches, followed by wonderful honey notes and a toasted oak spice, with a touch of floral fragrances playing nicely in the background. Palate: A velvety smooth mouthfeel with peaches and cream on entry, overlaid with vanilla, walnuts, dried fruit cake and a delicate minerality throughout. Finish: A long and crisp finish with fresh lemon oil and a lingering savoury spice. A tropical Atlantic Island voyage!

Boann Single Pot Still Irish Whiskey PX Cask | 70cl | 47% ABV B0F1DNJGL6
Initially, matured in Oloroso Sherry Hogsheads from Bodegas Garvey’s of Jerez da la Frontera, Spain. These 250ltr American Oak (Quercus Alba) hogsheads were chosen alongside George Espie (RIP ex Master of Wood from The Macallan) and Ventura Nunez from the famed Vasyma Cooperage in Jerez. We filled these casks with a mixed mash bill Single Pot Still distillate which included malted barley, unmalted barley, oats and rye. All of these grains are Irish and grown locally. We then sourced the most amazing PX casks we have ever come across. These PX Butts 500ltr+ were discovered by our partner cooperage in Andalusia, R.L. Rodriguez, and hail from the Mediterranean climes of Malaga. They had been in a vintage PX Solera system for over 60 years and were thick to the bone with gorgeous PX syrupy wine. A portion of these casks are made exclusively from Chestnut, which is a very rare variety of wood to mature whiskey in Ireland. Our friends across the water in Scotland can only mature their spirit in oak casks. We then finished our wonderful Oloroso Sherry matured Single Pot Still in these rare vintage PX Solera Casks. Harmonising the Oloroso Sherry hogsheads maturation with the rich Spanish PX Butts has created something truly special and decadent. The label design of this expression talks about the wood and the grain of the cask. As we have used very rare and special 60yo Chestnut PX Solera Butts for this whiskey. Nose: A decadent nose bursting with aromas of raisins and figs, beautifully backed by molasses, sweet caramel, and a touch of leather. Palate: A sweet and savoury palate with a wonderful mixture of honey syrup, fine dark chocolate, crispy bacon and cracked white pepper. Finish: Long and rich, with earthy caramel flavours that stay with you long after you’ve finished.
