In an espresso machine, water is pressed through a layer of finely ground coffee powder, resulting in the espresso: a strong coffee with a hazelnut-brown layer of foam, known as crema. The espresso is then served in quantities of around 25 millilitres. Not least because of this very small amount, the caffeine content is lower than in a conventional cup of coffee, despite the strong flavour.
How do the individual machines differ?
There are numerous differences between the machines, which are initially reflected in the price. The principle of espresso preparation is always the same - 88 to 94 degrees Celsius hot water is pressed through very finely ground coffee for about 25 seconds at an initial pressure of about nine bar, but there are still differences here. The respective machines have grinders with varying performances. It is fundamentally about filtering out the right degree of fineness. Normal coffee grinders do not achieve this precision. Variations in preparation are also evident in the technology of the machines. A distinction is made here between manual lever machines and portafilter machines, as well as fully automatic machines. In the manual lever machine, the pressure that pushes the water through the portafilter is generated manually via a corresponding lever. Portafilter machines generate this pressure automatically, while fully automatic machines can carry out various preparation methods fully automatically.
What should you pay attention to when buying an espresso machine?
In principle, the quality of the water and the beans, as well as their grind size, are significant for a good espresso (and good coffee in general). Important purchase criteria therefore include the grinder of the machine, its heating capability, and the water pressure it generates. Especially with manual lever machines, the build quality of the respective machines is important. What the machine can do is more important than how it looks. Finally, cleaning should also be a purchase criterion.
How do you properly clean the espresso machine?
Always use fresh water and regularly descale the machine, with the use of organic descalers being advisable. The brew groups should be lubricated about twice a year. Silicone grease should preferably be used here.
